What is Scalloped Corn? There is actually a bit of debate about what the word scalloped even means. A lot of times, it involves cooking something in a cream sauce and topping with bread crumbs. Like these scalloped potatoes. But that isn’t nesesarily true all the time. Check out this great article for more on the debate.

But, for todays purpose, cooking our corn in a creamy, cheesy sauce and topping it with a buttery cracker crust will serve us just fine!

Scalloped Corn Recipe

For step-by-step instructions, check out the printable recipe card below. But here is what you’ll need to get started:

  • CREAMED CORN – We use two kinds of corn in this dish. This creamed corn will help with that creamy consistency we want.
  • CANNED CORN – Any sort of canned corn will work fine. Just make sure you drain the kernels very well before adding.
  • LARGE EGGS – Get that custard-like consistency.
  • MILK – We used 2% milk. But you can just low fat milk to lighten this up. Or even half and half to make it a little richer.
  • BUTTER – We use unsalted butter. But if you use salted, just make sure you are adding less salt later. You also need melted butter to mix with the crackers for the topping.
  • RITZ CRACKERS – You will need some to mix into the casserole and some for the toppings.
  • CHEDDAR CHEESE – Shredded. We always recommend shredding your own block of cheese instead of buying the pre-shredded stuff at the store. Other than that, you can really use any cheese you’d like. We used Cheddar.
  • SALT AND PEPPER – To taste.

Storage, Leftovers and Freezing

You can store leftovers in the refrigerator in an airtight container for about 4 days. Reheat in the oven or microwave.

I would not freeze this recipe. The cracker topping would thaw out a bit soggy.

Notes, Tips and FAQs

  • ADDITIONS – You can always add some leftover ham, cooked bacon or some frozen peas and carrots to this dish.
  • DO YOU HAVE TO USE RITZ CRACKERS FOR THE TOPPING? – Nope! You can use Saltines, Butter Crackers, Oyster Crackers or even crushed Cheddar Cheese Goldfish or Seasoned Croutons.
  • CAN YOU USE FROZEN CORN IN SCALLOPED CORN? – Yes. Just make sure you thaw it first and remove as much of the water/moisture as possible.
  • TOPPINGS – Top with French Fried Onions before putting it the oven. Or add some chopped green onions just before serving.
  • CAN YOU MAKE SCALLOPED CORN IN THE CROCKPOT? – We haven’t tried this. But we don’t see why not. Just put all the ingredients in y0our slow cooker and cook on high for 4 hours or low for 6 hours. Add the topping about 30 minutes before it’s done. The topping will not be as crispy as if you baked it in the oven.

Ingredients

FOR THE CORN

  • 1 15 ounce can creamed corn
  • 1 15 ounce can corn drained
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 1/2 cup crushed Ritz Crackers
  • 1 cup shredded cheddar cheese
  • Salt and pepper

FOR THE TOPPING

  • 1/2 cup crushed Ritz crackers
  • 1/4 cup butter melted

Instructions

  • Preheat the oven to 350 degrees and grease a baking dish with nonstick cooking spray.

  • Stir together the creamed corn, corn, egg, milk, and butter. Stir to combine.

  • Add the crushed crackers and cheese. Season with salt and pepper. Stir to mix.

  • Spread the corn mixture in an even layer in an 8x8 casserole dish.

  • Stir together the butter and crushed crackers and sprinkle on top.

  • Bake for 40 to 50 minutes, until the corn is bubbly and the crackers on top are golden brown.

    My mother used to make Scalloped Corn. Leave out the Cheese and use Oysters. It’ Awesome.

    You only listed melted butter once. It does not say to divide. I find the amount listed it just enough for the topping. Would be confusing for inexperienced, or first time cook

    The recipe says to add crushed crackers and cheese to the “corn”.

    However, there is no item listed for crushed crackers IN THE CORN…..
    only crushed ritz and butter to add on top of the corn casserole.

    Please clarify recipe regarding “crackers’. Thank you

      Yep. Thanks for catching that. I should list 1/2 cup of crushed Ritz Crackers in the ingredients for the corn. That was my mistake. I fixed it. Thanks and sorry for the confusion.
