Street corn is one of those things that once you’ve tried it, it’s hard to go back to normal corn on the cob. It is so good and filled with flavor! That is exactly what you will get in this crack corn dip.

I will admit it was hard to not eat this until dinner was done. I started to dig in with a few tortilla chips while no one was looking.

I’ve also brought this to family and friends’ houses for get-togethers. It is super simple to throw together and it is always gone before the night is done.

  • Medium mixing bowl
  • 1 quart baking dish (THIS one works great!)

How to make this delicious dip for chips:

Making this Mexican dip is so simple. You will be done before you you know it!

To begin, preheat the oven to 350 degrees Fahrenheit.

Next, in a medium mixing bowl add in the mayonnaise, sour cream, smoked paprika, 2 cans of whole kernel corn (be sure to drain them!), shredded cheddar cheese, diced red bell pepper, sliced green onions, and diced green chiles (also drain this can as well).

After everything is in the bowl, mix it all together until everything is well combined.

Then, put all of the corn mixture into an ungreased 1-quart baking dish.

Once the dish has been filled, place it in the oven and bake the corn dip for 20 minutes or until the is heated through completely.

After it is done baking, serve it up with your favorite tortilla chips and enjoy!

NOTE: This will serve about 6 people so if you plan to bring it to a larger function I would double it to ensure everyone gets a chance to try it! Also, make sure to use a larger baking dish to hold all of the corn dip.

  • cup mayonnaise
  • ¼ cup sour cream
  • 1 teaspoon smoked paprika
  • 2 (15.25 ounce) can whole kernel corn (drained)
  • ½ cup shredded cheddar cheese
  • ½ red bell pepper (diced)

  • 1 Tablespoon diced green chiles (drained)
